Montreal's Ritz Carlton continues to define itself as the hospitality reference of European good taste with the introduction of its AM tea service.

The Monday morning media call to sample the hotel's new tea service came highly anticipated as we assembled in the lobby's Palm Court, the genteel setting off the lobby and venue for their renowned afternoon tea, many lavish cocktail receptions or, as yours truly has been known to do, relaxing with a drink after a day of shopping in the Holt's 'hood.

This occasion, though, was all about giving breakfast a 'tea-tweak', and began with the requisite mimosa served tall and chilled, and a choice of infusion. As you'd expect, the selection is well-edited and varied depending on whether you take yours with or without milk.  I go for the former and was suggested a flavourful Darjeeling that didn't disappoint. From there out came bowls of small-dice fruit salad, and plates served on a tiered stand, same in presentation to the afternoon service, but with a new selection of items made for mornings.

We're talking croissants and moist brioche with just a hint of sugar crystals for sweetness, smoked salmon on pumpernickel rounds with dill crème fraîche, vegetable frittata and, our fave, miniature quail-egg benny.  Of course, breakfast of this caliber comes with dessert, in this case mini palmier sandwiched with jam and, with a wink to the high tea we all know and love, berries and clotted cream.

Anyone who's been through the hallowed doors of this Golden Square Mile landmark can attest to an experience imbued with a sense of time and history. We're just glad for a new and opulent context in which to hold discreet business meetings, catch-up with an out-of-town friend staying at the hotel, or treat a special someone to a memorable moment.

Breakfast Tea served daily between 9-11:30am.
$36 per person, $48 with mimosa.
