In a new concept launch that highlights the ever-growing diversity of the city’s old town, La Champagnerie recently opened its doors to media, VIPs, and tastemakers for a spirited preview.

If the name isn’t a total giveaway, the bar’s offering focuses on champers and other sparklers, stocks a well-priced range of each, and promotes the accessibility and enjoyment of bubbles in much the same way as wine; that is, not reserved only for special occasions.

What might not be so obvious is that the house specializes in ‘sabrage’, or sabering bottles before pouring them out to enjoy.  Dating back to the time of Napoleon, this technique involves using, you guessed it, a saber or sword to knock off the end of a champagne bottle in one clean piece - cork, glass and all.  It’s impressive, and adds a good measure of pomp and flourish to the service.

Sébastien Piekutowski, Director of Operations for La Champagnerie, let us in on the inspiration as the popular La Champagneria bar in Barcelona, which offers Cava at the uber-value price of 5 euros a bottle.  ‘The goal’, he explained, ‘is to democratize what champagne is commonly known for and offer Montrealers a unique unpretentious space with an incredible variety of bubbly at all different price points and flavors’. 

We’ll raise a flute or two to that!
